Florence’s newest restaurant features southern-style comfort food that is made-from-scratch.

“Start camping out because people are going to be lining up,” said Ayssha Abner, the Florence location’s community manager.

Officially opening to the public on Monday, the new Maple Street Biscuit Company is located at 6785 Houston Road. The chain specializes in southern-style breakfast and lunch dishes, including a variety of biscuit sandwiches.

“Our focus point is our community,” Abner said. “We have everything made in house from scratch from our biscuits, our sauces, to our gravies. You name it, we all make it in house.”

The Florence location marks the chain’s 58th in the United States, and the third in Kentucky, with existing locations in Lexington and Louisville.

“We have people who scout out locations and honestly, with the mall being right here and the Florence Y’alls water tower, we felt like this was the right location,” Abner said. “We’re happy to be part of the community.”

Some of their menu offerings include the Squawking Goat, a creation which includes fried chicken, goat cheese and pepper jelly sandwiched in between two biscuits.

One of their best sellers, the Five and Dime, is another fried chicken biscuit sandwich topped with pimento cheese and bacon. In addition, the menu offers a variety of waffles with toppings like fresh fruit, whipped cream and syrup.

They also offer a kids menu, which includes smaller versions of their most popular dishes: Little Biscuits, Little Blueberries, Little Bird, Little Waffle, and Little Grits.

Founded in 2012 by Scott Moore and Gus Evans in Jacksonville, the company sold for $36 million to Cracker Barrell in 2019. Under Cracker Barrel’s ownership, the chain continued to operate as a separate brand with its own menu and identity. Since the acquisition, the company has continued expansion.
