St. Patrick’s Day: the annual celebration filled with green beer, green eggs and green…everything!
In honor of St. Patrick’s Day, I challenge you to eat as many greens as possible this week.
No, your green beer does not count. Remember our artificial food coloring discussion? I mean fresh or frozen unprocessed vegetables.
No, you don’t have to spend your days chomping on celery sticks and cucumbers. Healthy and hydrating? Yes. Satisfying? Not so much.
Think beyond a salad. Even I get tired of those! From a spicy stir-fry to a refreshing smoothie, there are countless delicious ways to get your greens at every meal.
Breakfast: Green omelet.
Keep the eggs their natural color – yolk included – and add chopped veggies like asparagus, spinach, kale and green onion for extra crunch and nutrients.
Lunch: Lettuce wraps.
Fill head lettuce with sautéed veggies and grilled chicken for a more refreshing take on a lunchtime staple.
Dinner: Baked salmon over a bed of spinach with shaved brussels sprouts.
Zest fresh lemon for a tangy taste.
