Don’t be surprised when you call Bellevue Pasquale’s that they greet you with “Fessler’s Legendary Pizza and Hoagies.” They have ended their association with Pasquale’s and are rebranding the restaurant under the family name. Owners Paul and Connie Fessler want everyone to know that the name changed but the menu hasn’t. Paul says that the Transition is in name only, not in food quality. We want to preserve what we have, says Connie Fessler. And that’s a good thing because I love the goetta pizza.
You can see and feel Paul and Connie’s energy and enthusiasm for their business. They are passionate. They just light up when they talk about the new name, retaining the same menu, and trying some new things. That enthusiasm is contagious and breeds success.

The restaurant business is in Paul’s DNA. He attended the Culinary Institute of America and then worked as a chef at some high end restaurants. So he knows his stuff. He wanted to work for himself so when the opportunity arose to take over the restaurant from his parents, he took it, and he has certainly improved on it ever since. Connie, on the other hand, came from a different background. My background is motion graphics and design. My role in the restaurant has evolved from solely producing graphics for the restaurant to being hands on operator over time as needed as I am the “mom” in the “mom and pop shop” that we are.

The restaurant has been in the Fessler family for 50 years when Paul’s parents purchased one of the first franchise restaurants. Second generation Paul and Connie took ownership 17 years ago and continue to serve the community. Awards, local recognitions, and art by local artists decorate the walls. And that’s a joy of supporting local business. You get to see the community in the business. Paul says that This is the best route for us to go since we want to keep our quality. Connie adds, If anything the quality will only get better. Paul is considering adding other types of pizzas and hoagies and running specials. If people want it then they’ll add it.
The changes will occur in stages. The new sign will arrive in a couple of weeks, employees are getting newly branded shirts, and the pizza boxes are being printed. The transition should be complete by the end of the month. Even though it will have a new name, Fessler’s Legendary Pizza and Hoagies will continue to be very much a part of the community.
You can’t expect something to improve without change. And that is what’s happening with the Fesslers. They committed when they put their name on the business. And Paul and Connie are committed.
